Ingredients
1 teaspoon lemon zest
8 oz. Crabmeat
2 8 oz flounder filets
¼ cup of onions finely chopped
¼ sweet peppers finely chopped
1 egg
¼ cup breadcrumbs
Salt
Pepper
Butter
Olive oil
Roasted red pepper sauce
1 Red pepper
6 oz of heavy cream
1 clove garlic
Salt

Olive oil
Broiled asparagus
12 stalks asparagus
½ teaspoon lemon zest
2 tablespoons parmesan
50% Salt /50 % white sugar mixture |

Directions
Blend crabmeat, lemon zest, onions, peppers, egg, salt, pepper, and breadcrumbs thoroughly.
Spread mixture over the flounder filets and roll up tightly. Top with a few small pieces of butter and place into a preheated 350 degree oven for approximately 20 minutes. Drizzle with red pepper sauce and serve.
Place red pepper and garlic clove on a piece of aluminum foil and drizzle with olive oil.
Roast at 325 degrees for 20-25 minutes or until soft. Dice these finely and place into a preheated saucepan with the heavy cream.
Allow this to simmer for about 5 minutes then salt and pepper to taste.
Place trimmed asparagus in a single layer on a sheet pan and drizzle with olive oil.
Broil on high for 2-3 minutes. Sprinkle with lemon zest, salt/sugar mixture, and parmesan cheese.
Serve immediately. |
